This recipe comes from our good friend Venessa Liang who we met while working on the set of Food Network's Great Chocolate Showdown Season 1. While on the show Venessa showed a keen eye for details and proportions. She shows us just that in this delicious and simple recipe for something that usually looks so complex to make, Crackers!

Sourdough Crackers w/Everything Mexican Bagel Spice

Ingredients:

Procedure:

    1. Combine all ingredients in a mixer with the hook attachment OR mix by hand in a large bowl. Mix on low for about 5 minutes until a smooth, elastic dough is formed
    2. Add more flour if dough is too sticky. This will depend on the hydration of your starter and will vary quite widely. This recipe is very forgiving, so PLAY around with it!! Wrap dough in plastic wrap and allow to rest in the fridge for at least an hour
    3. Preheat oven to 375°F
    4. Lightly flour your working surface and roll out dough as thin as possible (about 2-3mm). Sprinkle with Everything Mexican Bagel Spice and Maldon Sea Salt flakes. Cut your crackers into whatever shape you like!
    5. Transfer to baking sheets lines with parchment paper and bake for 8-12  minutes. **Time will vary depending on your thickness and size. Keep an eye on them and take them out when they’re nice and golden
Enjoy with hummus, your favourite cheese (we love aged Brie) or your favourite cracker pairing! Pop them in a Tupperware and store in your pantry. Will keep up to a month or more but you’ll probably have eaten them all well before that!” 

Sourdough Discard: Sourdough discard is the portion of your starter that is removed and discarded before feeding what's left in the jar.
