Collaborations are great way to expand our minds, explore new cultures and most importantly connect with friends and peers. At Playing w/Food we love to discuss new ideas all the time. Even if they are completely out there... ideas are great stepping stones. Collaborations and community is what we like to build with like minded individuals.
When we met T on the set of the Great Chocolate Showdown, we connected immediately. After the show ended we stayed in contact and continue to bounce ideas of each other and hopefully will come up with many new interesting and delicious concoctions. May this be the first of many collaborations!

About the creator of the NICE bar:

Chef T Lawrence-Simon is a dessert and pastry chef in Somerville, Massachusetts. In addition to baking, he works full-time as an aerial circus performer and is the Senior Coach at Esh Circus Arts.
Starting as a home baker, T found a love for pastry, specifically studying the French Patisserie methods. After being scouted and cast on Food Network Canada's Great Chocolate Showdown, T competed his way to the finals, proving himself as a talented and creative dessert maker.
Since the show's filming, T has pursued even more challenging technique and repertoire. T has also graduated from and become a Certified Chocolatier through EcoleChocolat's Professional Chocolatier Program. Cirque du Soufflé combines his love for the creative and daring aspects of circus performance with the precision and delicious capabilities of desserts.

The NICE bar celebrates friendships, and how much they help support you. As I’ve started my journey as a new food business, the food businesses owned by new and old friends have been so phenomenal in giving advice, suggesting methods, troubleshooting, you name it.
To make this bar, I got to create a bar with 3 of my friends' products, the two owners of Playing w/Food Abe and Isabel, and the owner of Curio Spice Co. Claire. I met Abe and Isabel on set of the Great Chocolate Showdown, and Claire is the college roommate of my soul friend Johnny.
My Playing w/Food friends sent me a fragrant and sensational supply of their Hibiscus Kissed Sugar, and Claire at Curio Spice introduced me to the dulcet Ceylon cinnamon, and the wild variety of cinnamons out there. This bar celebrates these friendships with a sprinkling of Hibiscus Kissed Sugar with a drizzle of Ruby* chocolate, snuggled up to a ceylon cinnamon enriched dark chocolate.
