Making the perfect chewy chocolate chip cookie is not easy... and adding tons of personality to a classic is not always easy. But this recipe does just that!!

The combination of tangy hibiscus notes, with the sweetness and caramel essence of gold chocolate together with the addition of the aromas and crunch of slivered almonds turn what otherwise be a "basic" cookie into a punchy delectable chewy bite full of personality and balance.

Hibiscus Kissed Almond-Gold Chocolate Chip Cookies

Ingredients:

2 cups AP flour

1 tsp baking powder

1 tsp baking soda

3/4 tsp sea salt

1 cup vegetable oil

1/2 cup Playing w/Food Hibiscus Kissed Sugar plus extra for sprinkling on top

1 cup brown sugar

2 large eggs

2 tsp vanilla extract

2 cups Gold or white chocolate chips

1 cup slivered almonds 

 

Procedure:

1. In a bowl combine flour, baking powder, baking soda & salt. Put aside.

2. In the bowl of an electric mixer, fitted with a paddle attachment, cream oil and both types of sugar for 5 minutes on medium-high speed. After the 5 minutes add one egg at a time until incorporated.

3. Reduce speed to low and add half of the flour. When it’s almost incorporated, add the second half and mix until combined. Scrape sides if you need to. Do not over-mix!

4. Using a spatula, incorporate the chocolate chips and almonds.

5. Cover the top of the cookie dough with plastic wrap & refrigerate for 24 hours.

6. Preheat over to 350 F, line 2-3 baking sheets with parchment paper or silicone pad. 

7. Using a medium-large ice cream scoop (the size of a golf ball) scoop dough on to the prepared baking sheets, leaving 2 inches between mounds. Sprinkle with Hibiscus Kissed Sugar.

8. Bake 12-15 minutes until golden but still soft. Let cool on sheets.

 

Note: Adding 4-6 drops of red food colouring will produce a pinkish cookie... which looks really pretty!
