Everything Mexican Bagel Chicken Schnitzel
Ingredients:
4 chicken breasts or 6 chicken thighs skinless, boneless & ponded thin
1 1/2 cups flour
1 1/2 Tbsp Playing w/Food Tangy Three Chili Salt
Fresh ground black pepper to taste
1 1/4 cups panko bread crumbs
2/3 cups Playing w/Food Everything Mexican Bagel Spice
2 large eggs, beaten
Oil for frying
Procedure:
1. Pound chicken thin (around 1/2”). If the pieces are too big, cut in half and then pound.
2. Set up a breading station | Bowl 1: flour, Playing w/Food Tangy Three Chili Salt & fresh ground pepper mixed | Bowl 2: beaten eggs | Bowl 3: panko bread crumbs & Playing w/Food Everything Mexican Bagel Spice mixed together.
3. Start heating the oil slowly in a pan or a pot to around 350 F (use a candy thermometer if possible). Just enough oil to cover the chicken.
4. While the oil is heating, bread the chicken. Pass each piece of chicken through the stages: flour mix, eggs, and panko mix. Shaking all the excess before putting it into the next bowl & trying not to make a mess.
5. Working in small batches - so the oil doesn’t cool too much - fry chicken until golden brown. Flip once around the halfway mark. It should take between 3-5 minutes per side, depending on the thickness.
6. Place the chicken on a paper towel lined baking sheet to catch the excess oil. Make sure the chicken is cooked through and any juices run clear. Keep warm in a 250 F oven on a separate baking sheet with no paper towel.
Notes:
- Squirt some lemon juice before serving.
- Serve with mashed potatoes or serve it in a sandwich.
